Vegetable Quinoa Recipe

Quinoa Recipe : (3–4 servings) 

Ingredients 

1 cup (190g) Quinoa (soaked for approximately 30 minutes) 

3 tablespoons olive oil 

1+1/2 cup onion (200g) 

1+1/2 teaspoon garlic, coarsely chopped 

1/2 tablespoon ginger, coarsely chopped 

1 tablespoon Paprika (NOT SMOKED) 

1/2 teaspoon turmeric 

1 teaspoon cumin 

Optional: 1/4 teaspoon cayenne pepper 

1 teaspoon coriander powder 

Season with salt to taste 

Carrots, 150g / 1 cup 

1 cup green beans, 130g 

200g / 1 cup chopped tomatoes 

Frozen Green Peas 70g/1/2 cup

325ml / 1+1/3 cup water OR AS REQUIRED

100g / 3+1/2 cup Spinach – ONLY LEAVES 

To taste (1/2 tablespoon) lemon juice 

to taste (1/2 teaspoon) black pepper

Toasted cashews, 1/2 cup (70g) 

2 tbsp / 5 g Cilantro (Coriander leaves) – finely chopped 

Method:

Wash the quinoa many times until the water runs clean, then soak in water for about 30 minutes. Once the quinoa soaked, drain the water and set it aside in a strainer. 

Add the cooking oil, onion, and 1/4 teaspoon salt to a hot pan. Fry the onion over medium-high heat until it begins to brown. 

After the onion begins to soften, add the finely chopped garlic and ginger and cook for 30 seconds. Then stir in the carrots, green beans, and spices (Turmeric, Paprika, Ground Cumin, Ground Coriander, Cayenne Pepper). Cook for 2-3 minutes on medium heat. Stir in the soaked quinoa, diced tomatoes, frozen peas, salt, and water. Bring it to a rolling boil. Then, with the lid closed, decrease the heat to low, for 10 minutes.  on low heat for another 20-25 minutes, or until the quinoa is cooked. 

Turn off the heat after the quinoa is done. ADD THE SPINACH LEAVES IMMEDIATELY WHILE THE QUINOA IS STILL STEAMING HOT, SO THE SPINACH CAN WILT FROM THE HEAT. Mix in the lemon juice and powdered black pepper gently to complete the dish . Garnish with roasted cashews and cilantro (coriander leaves). your Vegetable Quinoa Recipe is Ready ; Serve immediately. 

Important Tips: 

Thoroughly wash the quinoa to remove any impurities/gunk/bitterness and to give the quinoa a cleaner flavor. 

Because every cooker is different, adjust the heat and cooking time as needed. If you add salt to the onion, it will release moisture and cook faster, so don’t skip it. 

IF ONE BATCH OF QUINOA IS DRYER THAN THE OTHER, ADJUST THE COOKING WATER QUANTITY ACCORDINGLY.
